Our Mission

To accomplish our goal we are committed to working with local farmers and artisans from our home here in Maine to supply our restaurant with their products.

Our food is prepared using the freshest local and organic ingredients; from handcrafted cheeses to salt that is dried on flats here in Maine. From arugula to wild mushrooms, artichokes to radicchio, our fruits and vegetables are delivered daily. All the tomatoes on our pizza and in our sauces are grown down the road using San Marzano seeds from Italy. Our organic house salad is blended, grown, picked and delivered according to what is perfect that day. The seafood at Paolina's Way has been pulled from the water hours before it is served to you, and all of our meats are grass-fed and hormone free. And what is life without dessert! Our gelato is made nearby with all natural milk with no fillers or flavorings.

A few items come from other places - we use organic olive oil from the Mediterranean, organic balsamic vinegar from California, and sugar from Florida. We are serving Wines from sustainable and/or organic farms from around the world.

In order to minimize waste caused by plastic and disposable bottles we serve purified, filtered flat and sparkling water. We serve a locally brewed beer on tap and Maine organic beer in bottles. We searched for local soda and found three dynamite ones! And as we go on, we will try to make our own.

Environment. We are conscious of the environment in many ways in addition to our food. We manufacture our napkins; use recycled and unbleached papers in our bathrooms. Paolina's Way is decorated and outfitted with used "lawn sale" items: including chairs, dishes and flatware. The walls are painted with eco-friendly paints and we kept the original concrete floors; we take pride that the tables and booths are made with local woods and crafted by local artisans. Soon, we will be installing a solar hot water system on the roof. When you eat at Paolina's Way you can be confident that our footprint on Earth is as small as it can be, that our organic waste is used for composting, that we recycle, and always strive to protect the environment.

Community. We have tried to hold our cost at a level where we can provide the best food for reasonable prices. But we hope you understand that the cost of the best ingredients is high. We've also put together a staff that we hope will serve you well. In the coming months we are excited to build closer relationships with community organizations and will be opening our doors for many community events.
